후라이드 치킨 / Korea Fried Chicken

Ingredients
닭 1 마리 (1 whole chicken)
튀김가루 1.5 컵 (1.5 cups of frying flour)
후추 취향껏 (Black pepper, as desired)
우유 200ml (200ml of milk)
물 1.5컵 (1.5 cups of water)
식용유 적당량
(A suitable amount of cooking oil)

1. 적당한 크기로 토막낸 닭을 깨끗히 씻어서 우유에 30분간 재워준다. (잡내 제거)
2. 튀김가루 물을 1:1로 섞어준다.
3. 우유는 버리고 닭에 튀김옷이 잘 묻도록 버무려준다.
4. 식용유를 냄비에 넉넉히 부어 160~180도로 끓인다. (튀김가루를 넣고 1.2.3초 후에 떠오른다면 적당한 온도)
5. 160도에서 7분 1차로 튀겨준다.
6. 1차로 튀긴 치킨을 건져올려 수분과 기름을 빼고 2차로 3분간 한번 더 튀겨줍니다. (2번에 나눠 튀겼을 때 치킨이 더욱 바삭한 식감을 느낄 수 있다.)
7. 노릇하고 바삭하게 튀긴 치킨을 체에 밭쳐 기름기를 뺀다.
1. Cut the chicken into appropriate-sized pieces, wash them thoroughly, and soak them in milk for 30 minutes. (To remove any undesirable odor)
2. Mix the frying flour and water in a 1:1 ratio.
3. Discard the milk and coat the chicken pieces well with the prepared batter for frying.
4. Pour a generous amount of cooking oil into a pot and heat it to 160-180°C (320-356°F). (If the batter starts popping up after about 1-2-3 seconds, then it’s reached the right temperature.)
5. Fry the chicken for 7 minutes at 160°C (320°F) for the first round.
6. After the first frying, lift the chicken to drain off excess moisture and oil. Fry it for another 3 minutes in the second round. (Frying the chicken in two rounds gives it a crunchier texture.)
7. Gently tap the crispy fried chicken on a sieve to remove excess oil.
